As a busy working mom, time always seems to be at a premium. Dinner time can be so stressful, with the inevitable questions from the family “What are we having for supper?” It seems that it is always MOM who has to come up with the answers, and a lot of the time, we fall into a tired dinner routine. It seems we eat the same 4 or 5 dinners all the time.

I am constantly looking for new and easy to prepare meal ideas, so I was thrilled to check out the Club House website, which is brimming with recipes. Club House’s website is chock full of great recipes, and most are incredibly easy to prepare. With the idea of introducing my family to a new dinner entree, I decided to try out the Chicken Parmesan recipe using Club House Flavourful Recipe Mix in the Creamy Parmesan Chicken Penne flavour.

My family has eaten chicken parmesan in the past, but we hadn’t had it in the last year, so I was eager to try out the new Club House recipe. I started out by getting my prep bowls ready, one with flour, one with milk and egg, and one with Panko bread crumbs and seasoning. To begin, I used the Club House Flavourful Recipe Mix and coated each piece of chicken, front and back. Then it got dipped in each bowl, flour, milk/egg and bread crumbs. After all four breasts were coated, I heated up a skillet with olive oil. The chicken breasts were quickly pan fried for about 6 minutes. Next step was to put the chicken in the oven and coat them with tomato sauce and cheese.

The chicken was baking in the oven for about 20 minutes, and boy did it smell wonderful! During the time it was baking, I had just enough time to make a side dish, and set the table. My little dog also was enjoying the smell of dinner cooking, as she sat by the oven and had her sniffer in the air.

After garnishing the chicken with some Club House Parsley Flakes, dinner is served!

 

The family was happy with my meal idea! My six year old ate one and a half chicken breasts, a huge portion for his size! I found the chicken to be moist and savoury, a great contrast to our normal chicken routine. My husband also loved his meal, and polished it off quickly! Puppy sat quietly by the table, waiting for a teeny piece of chicken scrap.

I was really happy with my first Club House recipe meal, and will definitely be trying more out in the near future. The website has a “Recipe Box” feature where you can select your favourite recipes and refer to them later. I have about ten selected, and will trying them all out in the months to come.

Using the title of an album by one of my favourite bands, Rheostatics, bid you a good day, and welcome you to my new blog. Its title is real.clear.cool – and it marks a new direction in my brief blogging career. In my previous effort, Empty Pockets, the focus of the blog was documenting my personal finance journey from debt to freedom. (By the way, that struggle is ongoing!)

My new blog is going to be more far-reaching. I wanted to branch out, and write about some of my many interests, not just finance. So with this in mind, I decided to branch out and launch a new blog. With new beginnings in mind, I decided to get a professional to design it, and I think she did a great job! I will continue to search out freebies, interesting contests, and bargains. The ongoing evolution of my financial journey will also be documented; it is still rough going, and there is still much more to accomplish until I can declare myself “debt free”.
